http://www.firehand.com/products/index.html has some of the best software for handling, managing, and compiling your digital images.  I have used it for years and find it to be my most used applications.

http://www.hamrick.com has simply the best scanning software I have found.  It works with a wide variety of scanners, but not all, and I use it instead of any of the software packaged with the scanner itself.  Upgrades are frequent, and free.

http://www.tawbaware.com/maxlyons/index.html has some of the most extraordinary stitched images you will ever see.
